carrot soup potato soup

1 big carrot
1 small onion
1-2 potato(es)
black pepper
Inspiration / Recipe / Directions:
1. Peel and finely chop the onion.
2. Sauté the onion in oil in a cooking pot until tender. Add salt and pepper.
3. Peel the carrot and potato(es) and cut them into smaller pieces.
4. Put the carrots and potatoes in the pot and add just enough water to cover them. Add some butter, cover and bring to a boil.
5. Reduce heat and simmer until the veggies are tender, about 5-10 minutes depending on their sizes.
6. Remove a couple of carrot and potato pieces from the pot before you purée the soup with a hand-held blender until smooth.
7. Add salt and pepper to taste and put the pieces of carrot and potato back in the pot.
8. Enjoy.

Anette: When it comes to easy-to-make soups, this is my favorite. It doesn’t take long time to make (about 30 minutes), you only need a few ingredients and the soup has both great flavor, pleasant consistency and can be considered as a pretty healthy dish. 🙂
